Mission

My mission is to help people understand chocolate and appreciate it as one of the most extraordinary foods that exist when worked with respect, knowledge, and excellence.

I share technical tools, judgment, and confidence so that professionals and enthusiasts understand the meaning of each process, make informed decisions, and, when necessary, have the intellectual freedom to question inherited practices to discover better paths.

Vision

I envision a future where any professional, company, or passionate enthusiast can craft their own high-quality chocolate.

Access to exceptional cocoa beans, the availability of machinery adapted for small producers, and increasingly accessible technical training are transforming how we understand and produce chocolate.

My vision is to contribute to the democratization of this knowledge so that more people can create authentic, healthy, and differentiated products, establishing a direct connection with the origin, identity, and essence of cocoa.

Nonconformity

We don’t accept ‘that’s how it’s always been done.’ We believe in science as the driving force of creativity. We create our own rules and develop our own machines to go where no one else has gone.

Generosity

Excellence is useless if it’s not shared. Damian’s knowledge is a heritage for the entire sector. We teach with rigor, but also with the humility of someone who knows that learning never ends.

Authority

The authority of someone who has driven major revolutions in the sector discreetly, becoming the invisible engine behind the success of others.

Purity

If it doesn’t add flavor, it’s superfluous. As with Water Ganache, we seek the essence in everything we do. We are transparent, direct, and eliminate everything that masks quality, whether in a bonbon or a professional relationship.

Creative Autonomy

The questions come from you, and so do the answers.

We foster independence. We don’t want followers who simply make chocolate; we want creators who understand the process and dare to listen to their own intuition.

Sophistication

We are the meeting point between science and art. We have discerning taste, from the detail of a cocoa bean to the design of a book. We are premium, but also vibrant and full of energy.

Sustainability

For me, sustainability begins at the source. It means respecting cocoa, the people who grow it, and the work behind each bean. That’s why I believe in paying a fair price to the producer, one that recognizes their knowledge, effort, and commitment to quality.
